It is all in the dough

Our sourdough is made in house daily following the ancient Italian pizza tradition and is proofed for 72 hours.
The result is a base that is full of subtle natural flavors to the sense of taste, crispy and vivacious in color and composition.
What is even more important, thanks to the natural and not rushed rising process our bases are light and easily digestible to the stomach.

Tomato sauce

Simplicity is the key.
We use only Strianese san Marzano DOP (denomination of protected origin) tomatoes.
The highest possible quality you can find.

Mozzarella cheese

We choose to use fior di latte mozzarella which is still in water when it is delivered to us.
Extremely fresh, smooth, little tangy in flavour, elastically textured cheese finds its way on our pizzas thanks to its excellent melting characteristics.

Wood fire oven

When it comes to our temple of bricks we rely only on Di Fiore Forni, a family who has dedicated generations in this trade. Custom made to our specification and with the help of the right wood it delivers the ultimate experience of cooking a pizza.

Fresh ingredients

We source our ingredients locally where possible. Our meats are from Italy, whereas our fresh veggies are delivered daily by Vernon catering, sliced and prepared in house.
